Lomo Saltado – The Best Gastronomic Experience in Lima
Peruvian cuisine is full of some excellent dishes and drinks. The most well-known dish is the Ceviche and the most well-known drink is the Pisco Sour. Everyone who’s even remotely interested in Peru would know about these two dishes. In fact, while Peruvian cooking is gaining much appreciation in the international culinary world, some of the more authentic and well-known local dishes are still strangers to food lovers. Lomo Saltado is one such dish. At Royal Park Hotel, we consider this particular dish to be the best part of the gastronomic experience in Lima.
What is It?
This dish emerges from the Chifa cooking tradition that was started by the Chinese immigrants. It combines some essential elements of Chinese and Peruvian cooking to create a dish that stands out. It will confuse and mystify your senses because it’s such an odd mix of aromas, textures, and flavors. If you find the right Lomo Saltado, prepared by a chef from great boutique hotels in Lima, you might experience a true delight.
Lomo Saltado is stir fry dish, which is a quintessentially Chinese cooking technique. The primary ingredients in this dish are beef, onion, tomatoes, rice, and fried potatoes. Soy sauce and spices are added in for flavor.
How is It Made?
People familiar with Chinese cooking know what’s involved in stir fry technique. The process is the same. Oil is added to a wok, when it is hot the spices are added in, followed by the ingredients. Rice, of course, is cooked separately. The beef steak, which is usually sirloin, is marinated for a while before the frying takes place. The meat and the longer to cook ingredients are added first. Usually, tomatoes are added last and the dish is garnished with cilantro.
While soy sauce is added during the frying process, it can be added later to enhance the taste as well. Most restaurants in the great boutique hotels in Lima offer delicious versions of this dish.
The Signature Dish
While Ceviche is considered the signature dish of Peru, many Peruvian chefs and locals would argue. To them, Lomo Saltado actually represents the true spirit of Peru. Popular chefs consider it a great fusion of old and new and of different cultures. This dish should definitely be a part of your gastronomic experience in Lima.
